How beautiful to wrap pancakes for Shrovetide and for every day – a selection of the best ways. Filling for curd pancakes
Ideas for wrapping pancakes with different fillings:
Below are some more interesting options for folding pancakes. They are original and will look great on your desk.
Pancake corners
Fold pancakes into a corner is just as easy. First, fold them in half:
Then again in half. That is, it turns out three times. The filling here can be very diverse, even fruit.
Pancakes envelopes
Any filling is suitable for this wrapping method. But the most common for them is cottage cheese and meat (from minced meat).
Place the filling in the center of the pancake and wrap one bottom edge.
Now we turn the two sides.
Now we tuck the top edge and get an envelope.
The envelopes can then be fried in a pan, so they will hold better and even brown!
Pancake rolls
In this way, the same is not difficult, and it is one of the most common. Good for curd filling. You can also have another, but it must be thick so that it does not flow out of the pancake.
We put the filling in the center with a strip, after which we roll the pancake into a roll from the edge, like a carpet that we are carrying to drain.
Neat dummy rolls and stuffed
This option is for lovers of sushi and rolls. If you have fish and want to make yourself pleasant in the form of Japanese cuisine, but there is no way to order rolls. Make them yourself. We'll just roll it into pancakes.
We do everything as in the preparation of pancakes with a tube. But after the pancake is rolled up, we cut it into several equal parts, in size close to the rolls.
Now you have your own equally delicious rolls, cooler than any sushi restaurant
Triangular pancake envelopes
If you have mango and kiwi, then after making a filling for pancakes from it, you can then wrap them in a triangular envelope.
We spread the filling over the pancake, wrap it on three sides.
Now fold the top edge like an envelope.
After that, we fold the sides and get such a triangular envelope.
Tasty, healthy and pleasing to the eye!
Pancake horns
This is a type of tube folding. But with the only difference that from one end to the other the horn expands in the form of a bell. It's like the well-known creamy cones. The ideal filling for such pancakes will be cottage cheese.
Fold the pancakes in half. Put the filling on 1/2 of it and fold it into a horn.
Pancake triangles simple and double
Folding pancakes is akin to origami. Only instead of paper there is dough. But the rules are the same:
Using these shapes, you can roll pancakes in the same way. Simple triangle – bend the edges of the pancake so that it takes the shape of a triangle.
The diagram below shows how to wrap a double triangle.
Pancake bags
Pancake bags are an original dish for which a hearty filling of mushrooms, potatoes, meat, etc. is well suited. This is a kind of stew or vegetables in pots. Only the pot is a pancake that you can eat.
Put the filling on the spread out pancake.
Now raise the edges of the pancake and connect. You can fasten them with a cheese thread.

How to make delicate cottage cheese filling for thin pancakes: 5 important rules
Cooking canons also exist for such simple recipes. With all due respect to the creative streak of the culinary experts, they also adhere to certain rules:
- The curd filler must be made with an optimal consistency. It should not be liquid, otherwise it will flow out, nor too dry, because it will crumble when the product is used.
- Too liquid curd should be slightly squeezed out by placing it in cheesecloth and hanging it over the pan for a while.
- The dry coarse lactic acid product will become softer and softer when passed through a meat grinder or sieve.
- You can safely add currants, raspberries, strawberries, dried fruits and nuts to the filling for making pancakes with cottage cheese.
- Usually, for such purposes, soft and dense pancakes of a large size and without holes are baked, so it is easier to fold the envelope.
An interesting combination is made by salty filling and sweet pancakes. For example, the taste of lightly salted fish and cottage cheese can pleasantly surprise you.
The cry of a curd soul: how to choose the right one
Despite the abundance of varieties of this product in stores and on the market, it is not easy to find a truly healthy one. And this is important, otherwise the filling with cottage cheese for pancakes will ruin the mood not only for you, but also for everyone close to you. Let's figure out what details you need to pay attention to.
Firstly, it is important to note that the curd product is the third stage of milk fermentation. In other words, the milk is first fermented by bacteria or time, and then the whey is separated. In theory, from 0.5 liters of milk, 150-180 g of curd mass is obtained. Considering all these factors, it is easy to realize that high-quality fermented milk products cannot be cheap.
Quite often, manufacturers add various modifiers, ranging from starch to palm oil, in order to increase production profitability. Therefore, when choosing a product, you should pay attention to several circumstances:
- Color – the natural product is white with a creamy tint; there should be no blue or greenery.
- Smell is an important factor that is often forgotten before making a filling from cottage cheese for pancakes or pies. High-quality fermented milk products are characterized by a pleasant aroma without excessive sourness.
- Taste – that the curd mass begins to deteriorate, says a bitter or sour taste. Excessive sweetness should also be alarming – some manufacturers add sugar to interrupt the taste of the spoiling product.
- Structure – should be lightly oily, moderately greasy. A uniform texture is a sign of good produce. Layering in consistency and color palette hints at the remnants of different batches mixed by the manufacturer, such a product definitely does not need to be purchased.
- Granularity – lumpy and crumbly cottage cheese is overdried, you cannot use it without sour cream, even culinary processing is not able to get rid of the granular structure.
- Packaging – products in swollen or damaged containers should be immediately put aside. We also look at the shelf life and composition, it is clearly not worth buying a product with a large number of all kinds of additives.
Do not naively assume that the aunt's curd on the market will be better than the store one. You need to choose a seller not only by license, but also by the appearance of the counter – there should be no dirt. It is useful to make “friendship” with the manufacturer, so you will always be with fresh sour milk.
Why is there starch in cottage cheese?
Basically, starch is mixed with fat-free curd mass in order to increase its weight and density. This is how unscrupulous performers do, and from such cottage cheese, the filling for pancakes will turn out, to put it mildly, not very well. As far as I know, starch is absent in the products of Prostokvashino and Savushkin's product, maybe who knows other brands – share the names.
A simple way to test “for starch”: drop a drop of iodine onto the curd and observe the color reaction. A blue color has appeared, which means that starch is present. This is not to say that this is bad for our body, if, of course, the component is of natural origin. But, as for the modified product, there is little benefit here – fast carbohydrates increase insulin levels.
The “benefits” of palm oil, which is mixed in order to increase the shelf life and improve the taste, are highly questionable. Be that as it may, the box should contain the inscription “curd”, and not curd or curd product. Fortunately, now the manufacturer is obliged to indicate this. Here are a few manufacturers I trust:
- “House in the village”.
- Savushkin Product.
- “Prostokvashino”.
How to cook delicious curd filling
Cooking rules also exist for such simple recipes. As much as you would like to fantasize in the kitchen, but if you do not adhere to them, in the end you can send everything to the trash bin.
- Any curd filling should be of normal consistency, not liquid, so as not to flow out of the pancakes, but not too dry, so as not to crumble.
- Dry, coarse-grained cottage cheese should be rolled through a meat grinder, or rubbed through a sieve. Then it will become softer and more tender.
- Too liquid cottage cheese should be squeezed out a little; for this, place it in gauze folded in several layers and hang it over a saucepan.
- A car, currants, strawberries, wild berries, red caviar, greens, lightly salted fish, vegetables, nuts, dried fruits will perfectly fit into pancakes with cottage cheese.
- Try making sweet pancakes for the salty filling, the taste will pleasantly surprise you.
- For any filling, it is best to bake soft and dense pancakes, without holes and large enough to easily fold the envelope.
Sweet (classic) cottage cheese filling for pancakes
Traditionally, the filling is made from fatty cottage cheese with the addition of eggs and sugar. If the cottage cheese is dry, sour cream may be added. Add vanilla if desired. Then you are free to make any flavoring compositions, but these will be completely different recipes.
We will prepare:
- Half a kilo of cottage cheese
- Two chicken eggs
- A large spoonful of sour cream
- Sugar to taste
- A pinch of salt
Cooking process:
A very simple recipe, it is done quickly and always turns out delicious. If the cottage cheese is soft, then it is enough to knead it with a fork, immediately with the eggs. It is advisable to stir the sugar completely so that everything is dispersed. Do not want to mess around for a long time, replace it with powdered sugar.
In general, I simplify the whole mixing process using a blender. In this case, I do not recommend adding sour cream, so a soft consistency is obtained. It remains to fill the pancakes and fry or bake them.
Curd filling with raisins and dried apricots
Children love this dessert. In addition to taste, it also contains a lot of useful things.
We will prepare:
- Half a kilo of homemade cottage cheese
- Two-thirds of a glass of raisins
- A third of a glass of dried apricots
- Five tablespoons of fine sugar
- Two eggs
Cooking process:
Wipe the cottage cheese. We wash the raisins with dried apricots, it is better to pour boiling water over them for three minutes to make them softer. After that, be sure to dry on a paper towel. Dried apricots need to be cut into strips.
Break the eggs with sugar and add to the cottage cheese, you can add a little vanillin or cinnamon for flavor. Then add dried fruits and stir. We start pancakes, wrap neat envelopes.
Curd filling with banana
The best way to teach your baby to eat cottage cheese is to add a banana to it. This trick worked well for me, everyone loves bananas.
We will take the following products:
- Three hundred grams of cottage cheese
- A large spoonful of sour cream
- Two spoons of sugar
- Several crystals of vanillin
- One banana
How to cook:
We grind cottage cheese along with banana and sugar, we need to achieve a homogeneous substance. At the end, add sour cream and vanilla. You can grind either with a regular fork or with a blender. We fill the pancakes, place them on a baking sheet and bake in the oven.
Filling for pancakes from cottage cheese without eggs
Not completely without eggs, we will add yolks, for color and taste. Such a filling will turn out to be tender and soft. And do not be afraid that it will spread.
We will prepare:
- Half a kilo of cottage cheese
- Five tablespoons of condensed milk
- Two chicken yolks
- A large spoonful of potato starch
- A little salt
Cooking process:
Wipe the cottage cheese through a sieve and add yolks and condensed milk to it, add and stir until smooth. Then we look at the consistency, if the filling is watery, then pour a full spoonful of starch, if not, then half.
Filling with fresh apples and cottage cheese
In this recipe, apples are taken to taste, someone likes sour, and someone on the contrary.
We take:
- Three hundred grams of cottage cheese
- Two small or one large apple
- Two tablespoons of sugar
- Two large spoons of sour cream
Cooking process:
I tried to rub apples on a coarse grater, but, honestly, I didn't like that taste. It is much more interesting when the fruit is cut into small cubes and feels good in the filling.
It is better to remove the peel and pull out the seeds. Add chopped apples to cottage cheese, already grated with sugar and sour cream. This will make it easier to mix and the pieces of fruit will remain intact. Add a pinch of cinnamon or vanilla if desired.
Pancake filling with cottage cheese and semolina
Interesting and unusual taste. It is good for such a recipe to take rustic fatty cottage cheese. Try adding jam instead of sugar.
We will take:
- Half a kilo of cottage cheese
- A large spoonful of durum wheat semolina
- Five large spoons of sugar
- Vanillin optional
- A glass of sour cream
Cooking process:
The preparation is quite simple, put the grated cottage cheese in a bowl, fill it with sour cream, sprinkle with semolina and sugar. We grind all the components and wrap them in pancakes. Top dessert can be poured with any jam.
Curd filling with raspberries
This filling can be wrapped in plump small pancakes, making buns and pouring sweet sour cream sauce on top.
We will take:
- Three hundred grams of cottage cheese
- Two large spoons of powdered sugar
- A glass of fresh raspberries
- Half a glass of sour cream
Preparation:
Wipe the cottage cheese, add powdered sugar and sour cream, stir until smooth. Gently mix fresh, clean berries into the mass, trying not to damage it much. We make bags of pancakes and put the filling inside.
You can do it a little differently. Do not add berries right away. Spread the filling on the unrolled pancake, then spread it on top. Roll up a pancake.
Curd filling with condensed milk and kiwi
A very interesting combination of flavors. It is good to cut the fruit into cubes in order to distinguish its taste.
We take:
- Three hundred grams of country cottage cheese
- Two kiwis
- Two large spoons of sour cream
- Two spoons of condensed milk
- A large spoonful of granulated sugar
- Optional vanilla
Cooking process:
Rub the cottage cheese with sugar. Then we add condensed milk and sour cream there, mix well. In this recipe, I would not recommend using any flavorings, so as not to overpower the kiwi flavor.
Peel and cut the fruit into cubes. Put the filling in the middle of the pancakes, slices of kiwi on top, wrap the pancakes in envelopes.
Recipe for savory filling for cottage cheese pancakes
And this filling, like the others, is also the easiest to prepare. Greens will not only add elegance and a special taste, and children are unlikely to appreciate it, but adults will definitely like it. For greens, you can use green onion feathers, parsley, dill, arugula, and any greens that grow in your garden. And using different plants, each time the minced meat will have its own original taste. Try it!
Be sure to rinse the greens under running water, and then dry them on a paper towel so that no moisture remains on the greens. Then finely chop the leaves and add to the chopped cottage cheese.
Mix everything well and you can start stuffing pancakes.
Curd filling with garlic and herbs
- Half a kilo of fat cottage cheese
- Three cloves of garlic
- Half a bunch of dill and parsley
- Cooking salt
Rub the cottage cheese through a sieve. If you wipe with a blender, then throw in the garlic right away. The greens need to be washed and dried, then cut and added to the cottage cheese, salt and mix. Wrap in pancakes.
Curd filling with mayonnaise
- Half a kilo of cottage cheese
- Five cloves of garlic
- Half a bunch of dill
- Half a glass of mayonnaise
- Pepper, table salt
Put cottage cheese in a wide bowl, chop herbs and pieces of garlic, season with pepper and salt. Beat everything with a blender until fluffy, add mayonnaise.
Filling with cottage cheese, cheese and butter
- Half a kilo of low-fat cottage cheese
- One hundred grams of butter
- One hundred grams of cream cheese
- Two hard-boiled chicken yolks
- Salt
We wipe the cottage cheese, soften the butter in warmth, knead the chicken yolks, mix everything and add the cheese. You can beat the ingredients with a blender, the mass will be fluffier and softer.
Curd filling with butter
- Three hundred grams of cottage cheese
- Egg
- Two and a half large spoons of sugar
- Half a tablespoon butter, softened
We mix all the ingredients at once and break with a blender until a uniform mass. We start the pancakes, fry the envelopes in butter on both sides.
Curd filling with salmon
I add a secret ingredient to this filling – cream cheese. It turns out very tasty.
- Three hundred grams of cottage cheese
- Two hundred grams of salted salmon fillet
- One hundred grams of cream cheese
- One hundred grams of sour cream
Put cottage cheese, sour cream and cheese in a bowl, beat with a blender. Cut the salmon into small cubes. Put the filling in the middle of the pancake, lay out pieces of salmon on top and wrap it in an envelope.
Filling with cottage cheese and pickled cucumbers
The combination will seem strange to many, but the taste turns out to be spicy, try it, you should like it.
- Three hundred grams of country cottage cheese
- Three medium-sized pickled cucumbers
- Half a glass of sour cream
- Greens of onions and dill
- Two cloves of garlic
- Pepper, salt
Rub the cottage cheese with a fork with sour cream, salt and pepper. Mix the chopped greens with the filling and add the chopped cucumbers. Wrap in pancakes.
Diet filling
For those who follow the figure, you can lower the calorie content of your favorite dessert if you cannot give up sweets.
- Three hundred grams of cottage cheese 2% fat
- One green apple
- Two large spoons of honey
Honey for this recipe must be liquid. Mix it with cottage cheese using a blender, then add apple pieces. If desired, apples can be wiped.
As you can see, there are a lot of cottage cheese fillings. You yourself can easily come up with any by combining your favorite products. Share your recipes in the comments. See you.

5 Ways to wrap pancakes with caviar
Caviar can be served with pancake in a variety of ways. The main point is that the eggs should be visible. So that everyone understands that these are not just pancakes, but pancakes with caviar.
Classic pancakes – rolls
The simplest, but nevertheless beautiful way of serving specifically for caviar filling.
1 Just take the caviar and place it on the bottom edge of the pancake.
2 Roll up into a tight roll and cut in half obliquely.
Done.
Open triangle
And here, too, nothing complicated.
1 Cut the pancake in half and put a spoonful of caviar in the middle of each half and apply the edges of the pancake to its middle.
And that's all. Done.
Pancakes – bombs
But you probably haven't seen such a method yet. Very nice and impressive. And it's still simple.
1 Take a pancake and roll it up into a tight tube.
2 Connect the opposite ends together, giving the pancake a circle.
3 Press the ends well with your fingers. The texture of the pancake is such that the ends stick together and the shape will hold.
The size of the pancake is important because if you end up with a bagel with a large hole in the middle, then no filling will hold there. Ideally, the hole should be no more than 1 cm in diameter.
4 Now put a spoonful of caviar on top and you're done.
Pancake cake “Star”
But this option will look great on the festive table on February 23rd.
1 Take a batch of pancakes (at least 15 pieces) and fold them in half, making sure they are the same shape.
2 Then we lay out the resulting triangles so that in the gap between them we get the outline of a star. And fill this path with caviar.
Done.
Snails with caviar
Pancakes – snails are similar to bombs, only they fold a little differently.
1 First, fold the pancake tightly along its length.
2 And then in width. We stick a toothpick or skewer into the pancake so that it does not lose its shape.
3 Put a spoonful of caviar on top.
Done.
