Okroshka
Not sure what you can make from boiled eggs left over from Easter quickly and easily? Despite the fact that okroshka is mainly cooked in summer, such a light soup will also be to your taste in spring.
Ingredients:
- 300 grams of boiled sausage;
- 3 boiled potatoes;
- 3 boiled eggs;
- 2 fresh cucumbers;
- radish;
- 150 ml sour cream;
- 1 bunch of dill;
- 1 bunch of green onions;
- salt to taste;
- pepper to taste;
- kvass.
Preparation:
- Cut the sausage, cucumbers, potatoes and eggs into small cubes.
- Cut the radish into quarters of circles.
- Rinse and dry the greens, chop finely.
- We transfer all prepared ingredients to a salad bowl, salt and pepper, mix. We spread okroshka on portioned plates and fill with cold kvass. Add sour cream if desired.

Egg labeling does not determine their freshness – this is an exclusively mass-dimensional characteristic.

Puff salad with boiled eggs and fish
Boiled eggs are indispensable in flaky mayonnaise salads, as they go well with almost any product and play the role of a connecting link.
Ingredients (for 4-6 servings):
- Boiled eggs – 4-5 pcs.,
- Canned fish (any, except those in the tomato) – 1 can,
- Boiled peeled potatoes – 4-5 pcs.,
- Grated cheese – 200 g,
- Onions (medium) – 1 pc.,
- Vinegar (9%) – 1 tsp,
- Sugar – 1 tbsp. the spoon,
- Warm water – 2 tbsp. spoons,
- Mayonnaise – 1.5 bags of 150 g each,
- Salt, black pepper – optional.
Preparation:
First, marinate the onion: cut it into thin half rings, remember a little with your hands along with sugar, pour vinegar mixed with water, and leave for 15-20 minutes.
Mash the eggs with a fork until they become small crumbs, and the fish (together with the liquid in which it was located) – until a pasty state, chop the potatoes on a coarse grater. Divide all foods, including cheese and onions into two parts.
Put a layer of potatoes on a salad dish, then eggs, cheese, fish and onions, then again potatoes, etc. Apply mayonnaise to each layer with a mesh and, if desired, add salt and black pepper. Decorate the top as you wish. Let the salad sit for 20-30 minutes and serve as a starter or main course.
Two more versions of this salad:
- You can add 2 layers of boiled and coarsely grated carrots to the salad, putting them on the onion, and mix mayonnaise with ketchup for dressing.
- At the stage of food preparation, you can put grated zest from half a lemon into the fish, and mix the grated cheese with finely chopped dill or other fresh herbs.
Meatloaf with eggs
If boiled eggs remain after Easter, you can prepare a simple dish that will decorate any meal.
Ingredients:
- 700 grams of minced meat;
- 1 chicken egg;
- 6 boiled eggs;
- 1 tbsp mustard;
- 1 tbsp mayonnaise;
- 2 tbsp decoys;
- 1 onion;
- a bunch of green onions;
- 1 tbsp butter;
- 1 tbsp sunflower oil;
- salt to taste;
- pepper to taste.
Preparation:
- Put the minced meat in a bowl. Add raw egg, semolina, mustard, mayonnaise, salt and pepper. Mix everything well and leave the mass for 30 minutes until the semolina swells. Fry chopped onion in a frying pan until golden brown.
- Clean the boiled eggs and cut into small cubes. Chop green onions. Mix it with chopped eggs and fried onions. Salt and pepper to taste, mix.
- Place a piece of foil in front of you. We do not spread the minced meat on it and smooth it over the entire surface with a thickness of 2 cm.
- Put the egg and onion mass on top of the entire surface. We leave 3 cm from each edge.
- We wrap the edges of the foil, forming a roll. We wrap the roll with foil and send it to the oven for an hour. 10 minutes before readiness, break the foil to brown the roll. Cut the finished dish into portions and serve.
Pudding sandwich
Not only do egg yolks help thicken this pudding, but they also give it a silky-smooth feel. Made with butter and brown sugar, this homemade pudding will take you back to baby pudding cups – but much better.
Shelf life of boiled eggs
The shelf life of boiled eggs depends on the storage temperature, freshness and storage conditions of the eggs before they are cooked. On average, the shelf life of boiled eggs is as follows:

Preparation

Preparation
Salads with so-called egg pancakes are no less popular. In fact, this is an omelet (sometimes with flour, sometimes without), chopped into strips. There are many options for additional ingredients.

- 250 grams of boiled chicken fillet
- 2 onions
- 5 boiled eggs
- 3 apples

What to do:
