Ingredients:
- Chicken broth (or water) – 1 l
- Bulb onions – 4-5 pcs.
- Flour – 1 level tablespoon
- Butter – 100 gr
- Loaf (or baguette) for croutons
- Salt, black pepper – to taste
- Bay leaf – 1 pc.
- Cheese – 100-150 gr
Preparation:
1 Peel the onion and cut into half rings. Put butter in a saucepan and melt it over low heat. Then dip the chopped vegetables there and stir so that it is all greased with oil. Then close the lid and simmer for 25-30 minutes also over low heat.
2 Then add flour there and stir. Next, pour in the pre-boiled chicken broth or just water. Bring to a boil and simmer over medium heat for 25-30 minutes. 5 minutes before the end of readiness, put bay leaf in the soup, salt and pepper.
3 While our stew is cooking, prepare the croutons. One plate relies on two slices of a loaf or baguette. You can fry the slices in a pan with vegetable oil on both sides. You can also dry them in the oven, microwave or toaster. Choose any method that is convenient for you.
4 Pour the prepared soup into ovenproof bowls or pots. Sprinkle with grated cheese on a coarse grater on top. Then place two slices of toast and sprinkle with cheese again on top.
5 Place the plates in the preheated oven for 5 minutes to melt the cheese properly. After that, take out, sprinkle the soup with any herbs and proceed to dinner. You need to eat it hot. The dish turns out to be very aromatic, light, but satisfying.

It doesn't matter what broth the soup is cooked in – meat or vegetable. The main secret of this dish is the correct sautéing, which should last at least half an hour.
Thinly chopped sweet onions are fried in a cast iron skillet with a thick bottom, over low heat with constant stirring. Onions are usually sautéed in a large amount of butter or olive oil, but most often the oils are mixed to improve the taste. If you manage to fry the onions for an hour without overcooking, overdrying and bringing them to a pleasant ruddy color, you can be called a virtuoso of onion soup. It is for the ruddy shade that sweet onions are taken, since they caramelize well. In this case, first, you should sauté the onion over high heat so that it releases water, and then reduce the heat to a minimum and simmer – the longer, the better. Finally, some chefs add a little sugar to the onions, especially if bitter varieties have been used.
Flour is added to the onion, lightly fried, and then poured with water or broth, diluting it with white wine, brandy or sherry for a piquant taste. Then cheese or feta cheese is added to the dish, insisted for a while and served with croutons. After half an hour of slow cooking, the soup is salted, the bay leaf is taken out and poured into plates, in each of which a slice of dried white loaf is placed and ¾ glass of grated cheese is poured. The French love Gruyere and Emmental cheese, sometimes they cut it into slices and put it on a toast. Plates are placed in a warm (not hot) oven to melt the cheese, and then proceed to tasting, and the French additionally put a cup of grated cheese on the table. We prepare all the necessary ingredients
Cut the onion into quarters and then into a thin strip. Everything will take about 0.5 kg of onions, try to take tasty, white onions.
Melt the butter in a wok or deep skillet over medium heat
Put the onion in the pan.
Fry the onion, stirring occasionally, until it begins to caramelize, acquiring a golden crust. Onions are sautéed within half an hour, but professional chefs can do this for many hours, achieving a specific variety of flavors. This is the most important stage !!!
Then pour in 200 ml of broth.
The broth will gradually evaporate.
And at this time we add a couple of pinches of thyme. It will play along well with the bow.
