The best, of course, is fresh! A frozen kebab will also work well, provided that you defrosted the meat correctly – not in hot water or in the microwave.
The most delicious barbecue is made from chilled meat. It happens that an unreliable seller passes off thawed meat as chilled. To check, it is enough to press on the meat with your finger – a mark will remain on the thawed, since it is looser in texture. Thawed meat is distinguished by a more intense color, high “moisture” and reddish juice. Chilled fresh meat – dry, non-sticky, uniform color without strong sheen.
How to properly marinate a kebab?
First rule – forget about vinegar! For fresh meat, it is completely unnecessary! Second, use the right spices.
The ideal chicken marinade is vegetable oil, thyme and rosemary, garlic, salt and pepper. It is better to marinate pork in mineral water and freshly squeezed lime juice (half a lime for 2 kg of meat), adding salt and pepper. If you cook a barbecue at a picnic, expect that you need to take 500 grams for one man. meat, and for women and children – 300 gr. Moreover, this rule applies not only to pork, but also to any meat. After all, it is not necessary that you can cook a shish kebab from pork. Lamb, beef, nutria and chicken are also suitable.
Of course, you can also grill fish, but only on condition that the road to the picnic site does not take long during the hot period.
The fish spoils pretty quickly. Therefore, it is more suitable for treating during a barbecue in a personal plot or summer cottage.
Vegetables will help diversify the menu and neutralize the fat content and severity of meat products.
They will need at least 200 gr. for each person. Keep in mind that this calculation is taken specifically for vegetables as a snack.
But for grilled vegetables, it would be optimal to take 150 gr. for each guest. Remember that not all vegetables can be roasted over an open fire.
The best grilled snacks are obtained from eggplant, zucchini, squash, zucchini, white onion, tomato, champignon mushrooms, bell pepper.
You can also bake potatoes in a fire. If you don't want to get dirty in soot, stock up on foil in which you will wrap the potatoes.
