And at the very end of the 13th century, Marco Polo brought from his travels to Europe a new recipe for a delicacy, for which saltpeter was used to freeze. From that moment on, not a single aristocratic and royal dinner was complete without ice cream.
The recipes were kept in the strictest confidence. And ice cream workers were the subject of envy and cruel intrigues among the nobility, they were even taken away from each other, tempted by any tempting promises. And then more – the ice cream recipe, in general, became a state secret.
It is strange to know about this now, when the dessert can be purchased at any grocery store, and, of course, cook it yourself. And at home, ice cream is easy to make, even without an ice cream maker. The mystery has come true.

Let's go back to our time. A modern delicacy can be classified according to its composition, taste, and consistency. For example, the composition of ice cream is divided as follows:
- A delicacy based on animal fat (ice cream, milk and butter).

- Pour milk into yolks whipped with sugar in a thin stream.

This is one of my favorites and the easiest recipe. Light and delicate delicacy, no cream or eggs. The result is a delicious, refreshing dessert that can be eaten all year round. Decorate with fresh fruit and mint leaves.
Ingredients:
- 2 bananas
- 1 ripe mango (or any other fruit)
- 250 g natural yogurt (cream) without additives
- 1 tsp vanilla sugar
Cooking method:
We take bananas, peel them. Cut into circles of any size.
Peel off the mango fruit. We also chop it into pieces.
Place the slices in a blender bowl. Add all the other components to them. Next, let's work with the mixer.
Break them well and mix until smooth and good foam.

For those who don't need extra calories from sugar and cream, I suggest making popsicles.
For it, you can use fruit juice, pieces of fruit or pulp puree.

- Orange juice – 50 ml

Any fruit, fresh or frozen berry can be used in this recipe. We dilute gelatin or agar agar. Such a dessert is made in 5 minutes, it turns out to be very tasty and healthy.

We add sugar to the berry mass to taste, but you can do without it or replace it with a sorbent. Mix well.

Punch cottage cheese, yogurt, condensed milk and two types of sugar with a blender. Add raspberries and beat again until smooth.
Transfer the mixture to a wide dish, cover with a lid or plastic wrap and place in the freezer for 3-4 hours. During this time, you need to mix the ice cream a couple of times.

Ingredients
- 100 g of dark chocolate;

Remove the saucepan from the stove and let it sit for at least 1 hour for the milk to absorb the mint flavor. Then strain the milk through a sieve and squeeze the mint well. It won't come in handy anymore. Heat the milk again without boiling.
Whisk the yolks with the remaining sugar. Add hot milk in a thin stream without stopping. Put the mass on low heat and stir with a spatula until lightly thickened, without bringing to a boil. Run your finger over the shoulder blade: if a clear groove remains, remove the pan from heat.
Place the pot in a container of ice water and cool completely while stirring. Whip cold cream with a mixer until creamy and mix with the milk mass.
Add grated or finely chopped chocolate into the mixture and stir. You can sprinkle chocolate on ready-made ice cream.

A very tasty recipe for a real ice cream from the Soviet era. It contains no substitutes and vegetable fats, everything is natural without chemicals. The dessert turns out to be tender and airy. Add powder and vanillin to them according to the recipe. Stir the mixture well until they turn white. Then we pour milk to them. Mix well.
We put immediately on a slow fire. Cook with constant stirring until thickened, a little less than a minute.
Important! The mixture should not boil, otherwise the yolks will cook and nothing will work.
Bring to a boil. We immediately remove the cooking from the stove. Leave to cool completely. During this time, it will become even thicker. If you get lumps, punch them with a blender until smooth.
Next, we take out the cream from the refrigerator. Pour out their whipping bowl. First, we work at low speed, then go to the highest. Beat until fluffy. The result is a soft and delicate consistency. We do not bring it to stable peaks.
We pour in there gradually in 2-3 tbsp. spoons of custard base.
Mix everything smoothly with a spatula. Next is the final stage. We take the container and put the resulting dessert into it. We close the lid and send to harden in the refrigerator. After 30 minutes, we take out our delicious masterpiece and mix gently with a spatula.
Close it again and return it to the freezer again. We repeat this operation 2-3 more times, every half hour. Then we leave the container with the contents in the cold for 5-6 hours.

A very simple homemade ice cream recipe in 5 minutes
It turns out that ice cream can be made in just 5 minutes. And you don't need any special ingredients for that.
Only 300 grams of frozen (required) berries, chilled cream half or a little more than a third of a glass and 100 grams of granulated sugar. You can take any berries, but strawberries, raspberries or blueberries (or all together) are ideal.
So, put everything in a blender and mix vigorously for 3-5 minutes. You can add a little vanilla to the mixture. That's all!

Found an unusual recipe without the use of cream and milk. Very unusual, honestly. But it turns out pretty well.

Put two tablespoons in the yolks. sugar and pour in vegetable oil. Beat this mass at maximum speed for about 4 minutes.
Grind the strawberries in a blender until puree.
Now mix both masses and beat for another 1 minute.
Now we need to beat the whites. Important! Protein should be cold.
There should not be a drop of water on the dishes and whisks. Completely dry instruments, otherwise the whites will not churn.
Add a tablespoon of sugar and whisk for another 1 minute. Then add the berry mixture to them and mix.
We prepare cups and molds and fill them with the ready-made mixture.
Freeze.
It can be quite difficult then to pull out the delicacy from the molds. Therefore, we take it out of the freezer.

The recipe is pretty easy and simple. It is prepared by hand (without an ice cream maker) from the most affordable and inexpensive products without repeated stirring. You can add chocolate and nuts as desired.

- 600 ml milk
- 180 g sugar
- 2 eggs
- 3 tbsp. l. flour
- 2 g vanillin

Cooking method:
Before starting work, it is advisable to immediately decide. If you want to make this dessert with chocolate, you can reduce the amount of sugar. Mix the egg yolks with a little sugar. Pour in some of the warm milk (room temperature) there. Pour flour to the products.
