Why are squids useful?
Seafood contains many vitamins and minerals, including folic acid, manganese, iron, calcium and vitamin C. Squid is recommended even for those on a diet. Its beneficial properties:
- helps to absorb iron. For example, 85 grams contains about 90% of the daily value of copper, which plays an important role in the metabolism and storage of iron, which means it is involved in the formation of red blood cells. Copper deficiency can trigger the development of anemia.
- prevents the development of inflammatory processes due to the content of selenium.
- relieves headaches, as it is rich in vitamin B2 (riboflavin);
- normalizes the condition of the skin, hair, nails due to the contained animal protein;
- reduces the risk of developing heart disease due to the large amount of vitamin B12;
- stabilizes blood sugar levels due to the content of vitamin B3;
- reduces pressure due to the presence of potassium in the composition;
- relaxes muscles and nervous system due to magnesium;
- strengthens the immune system thanks to zinc;
- contributes to the formation of healthy strong teeth and bones, because the meat is saturated with mineral phosphorus.
How to choose squids
Nowadays, squid is a fairly common product that can be purchased in supermarkets, and in small shops “near the house”, and in noisy markets, but in any case, you need to look for them in the frozen food departments. Of course, if you live by the sea, you probably know better than me where you can get the freshest and most delicious seafood, but in central Russia, the road to them always runs through the freezer. However, this is not so scary, since frozen squids are well stored, practically without losing their taste and benefits, so you can take any product in the store, checking only the expiration date on the packaging. It is also important to pay attention that there are no deposits of ice and snow inside the vacuum package, since this means that the product has been thawed and maybe even more than once, which, of course, will negatively affect its quality.
Sometimes in stores, especially premium ones, you can find already peeled squid carcasses or rings, which, of course, attract attention with their whiteness and the ability to avoid the dreary cleaning process. Nevertheless, I do not advise spending a lot of money on buying such peeled squid, because after cooking they have a slightly rubbery structure and never turn out to be as tender as simple and nondescript carcasses.
How to peel squid
There are two approaches to cleaning squid, the first of which involves pre-defrosting the seafood. Ideally, it is better to defrost squid in the refrigerator compartment, however, this is a very long process that can take about a day, which is not always acceptable, so I have an express method that allows you to get defrosted carcasses in just an hour or two. To do this, pour some hot water into a bathtub or sink with a closed drain and instead of a boat, put a pack of tightly sealed squid into free swimming. By the way, you can do the same with frozen fish fillets if you forgot to take it out of the freezer in advance or you just suddenly wanted fish dishes.
Thawed squid carcasses do not look very appetizing, since on the outside they are covered with a nondescript skin, but inside they contain a full set of all kinds of organs that must be removed before cooking. First, the squid carcass should be carefully turned inside out and by hand separate from it all organs and other substances that are not related to the outer fleshy walls that are used for food. In addition, the inside and outside of the squid meat is covered with a thin colorless film, which you must try to make out and be sure to completely remove, otherwise, after cooking, the meat may turn out to be tough and even slightly bitter.
Then the squid must be turned back and the outer dense colored peel and the above-mentioned film must be removed from it. In order not to waste extra time on these procedures, I advise you to focus more on the film, since it is removed at the same time as the outer skin. Since the film is often completely invisible, you can try to pick it up at random with your nails or a small knife, and when you have the edge of the film in your hands, you must slowly and carefully remove it from the carcass, like a stocking. Of course, the film is very thin and can easily break, but we must not despair and continue from the place where it happened.
The second approach, which is often used to clean squid, is good only in that it allows you to do without their preliminary defrosting, since in this case frozen carcasses are poured with boiling water from a kettle for 5 minutes. As a result, the squids quickly defrost and the outer peel begins to peel off almost by itself, however, all organs and the laborious film remain in place, so this procedure does not greatly facilitate the cleaning process. In addition, in this case, squids are subjected to additional heat treatment, to which they are very sensitive, which later does not have the best effect on their consistency.
Whichever cleaning option you use, before boiling the squid carcasses, you need to rinse well with cool running water inside and out, after which you can immediately proceed to the next stage.
Before cooking
Press the raw carcass tightly to the board with one hand, carefully remove the thin film with the other. If the skin does not come off badly, pour boiling water over the squid. The head and tentacles must be cut off. You can throw away the head, and the tentacles will come in handy when cooking. Remove the insides – chitinous plates that resemble cellophane. When the carcass turns white, it can be boiled, fried, or baked in the oven.
After cooking
If you decide to boil the squid without preliminary cleaning, then you can get rid of the film in a few minutes. Dip the boiled carcasses in cold water for a minute, and then gently pull off the film by picking it up with your fingers or using a new kitchen brush with soft bristles – after a few strokes, it will roll into balls and peel off easily.

How to cook squid
Cooking squid is a very simple and quick process, which, nevertheless, is of paramount importance in preparing a delicious salad, since squid should never be kept in boiling water for a long time, otherwise they will become tough and resemble rubber. Therefore, I want to share with you the best way to cook squid, which guarantees the perfect result and the most tender squid meat for salads.
In a medium-sized saucepan, boil water and lower one prepared squid carcass there, and then immediately time it.
Exactly after a minute, the squid must be carefully removed with a slotted spoon, then wait for the water in the pan to boil again and put the next carcass there in the same way.
In this consistent way, all squid that are available should be cooked, and I guarantee that they will have the most delicate consistency, which distinguishes only properly cooked squid.
Despite the fact that this method of cooking squid one by one may seem time-consuming, nevertheless, it does not take much time, but it gives confidence that the squid will be cooked exactly as needed. The thing is that if you put a lot of squid into boiling water in one ensemble, then they noticeably lower the temperature of the water and it becomes unclear whether they are boiling or not yet and whether it is time to time the time, so in different situations they can turn out damp or, conversely, overcooked … In this case, each squid goes into normal boiling water and is cooked for exactly the time that is necessary for its optimal readiness.
Cooking time for peeled carcasses
If you don't know how to cook peeled squid, follow these tips:
- pour water into a saucepan, wait until the liquid boils;
- add salt, seasonings to boiling water;
- Place the peeled carcasses in boiling water for 2 minutes, when the meat turns white, drain the water. If you have digested seafood, boil them for more, but no more than 30 minutes – during this time, the meat will become soft again;
- cut the boiled carcasses into rings and serve with beer or use to make salad.
How much to cook unpeeled squids
The cooking process for peeled carcasses and those with film is almost identical. This option will take a little more time. Proceed like this:
- defrost carcasses;
- put a saucepan filled with water on the stove;
- add salt, lavrushka, allspice to boiling water;
- dip the carcasses into the water, turn off the heat, then cover the pan with a lid;
- take out the seafood after a few minutes.

5 Salad with squid Gulliver
300-400 g squid fillet
500-600 g of jacket potatoes, cut into thin slices
100-150 g pickles
50-75 g canned green. peas
2 boiled eggs

Remove the cooked squid fillet from the broth, cool and cut into strips across the fibers.
Stir in thinly sliced potatoes, cucumbers, chopped eggs, peas.

3 Carrot salad with squid
300 g squid
3 carrots
1 onion
2 tbsp lemon juice
2 pickled cucumbers
2 eggs
2 tbsp mayonnaise
salt and pepper
Pre-cook the carrots. Peel, cool and grate.
Boil the eggs and cut them into cubes. Also cut the pickled cucumbers into small cubes. Finely chop the onion.
Mix carrots, eggs and cucumbers and onions.
Boil the squids in salted water and cut into strips.
Add to salad. Season with salt and pepper, add lemon juice. Season with mayonnaise.
6 Vegetable salad with squid
300 g squid
1 bell pepper
2 tomatoes
2 potatoes
1 bunch of green onions

4 tablespoons sour cream

Pre-cook potatoes. This can be done in the microwave, covered and set on full power for 2 minutes.
Cool and dice the potatoes.

Products:
- squid – 500 gr.;
- mayonnaise – 5 tablespoons;
- chicken egg – 5 pcs.;
- onion – 1 pc .;
- salt;
- pepper;
- bay leaf – 1 pc .;
- greens.
Technology:
- Salt water, pepper and throw laurel.
- Bring to a boil and dip the meat previously peeled from the film in boiling water.
- After that, the fillet should be laid out, cooled and cut into small neat pieces.
- Boil the eggs for 15 minutes.
- After that, they need to be cooled, peeled and cut into cubes.
- It is better to take red onions, they are good for salads. It needs to be cleaned, cut into rings more efficiently, and put in hot water to remove bitterness and a certain softness.
- Combine all the chopped ingredients.
- For a good taste, add salt, pepper, mayonnaise, and garnish with fine herbs.
Advice! Do not overcook the clam for more than 3 minutes, or it will be tough like rubber.

Squid salad with apple and green peas
INGREDIENTS:
- 600 g squid (4 small carcasses)
- 4 large eggs
- 1 small jar of green peas (200 g)
- 1 medium apple
- 1/2 onion
- 3 tbsp. l. mayonnaise
- salt
COOKING METHOD:
1 In order to prepare a simple and delicious salad with squid, apple and green peas, you first need to defrost and peel the squid thoroughly to make neat and beautiful carcasses. 
2 Then the squid carcasses must be boiled one at a time in boiling water for a minute, then cooled and cut into strips. 
3 Boil the chicken eggs hard-boiled in boiling water for 13 – 15 minutes and cut into large cubes. 
4 Peel the onions and chop as small as possible.
Advice! Stocks of onions, of course, are present in every home, since this is one of the cheapest and most common products that is involved in the preparation of so many dishes. However, I advise you to strain a little and buy a special salad onion – red or white from the store, as it tastes much more delicious raw and just fits perfectly into the structure of the squid salad.

5 The apple must be peeled and cored with seeds, then cut into thin strips and added to a salad bowl. For optimal combination with other ingredients of the salad, the apple must have a pronounced sourness, and in addition, the most dense and elastic pulp, otherwise, when slicing and mixing, it can turn into an unappetizing porridge. 
6 The final ingredient in this squid salad is the green peas, which must be siphoned off in a colander to drain the excess liquid and added to the rest of the dish.
7 Salt the salad, season with mayonnaise and mix very well. 
To serve the squid salad, I used a special mold that allows you to form an appetizing cake like in a restaurant, but of course, this salad is very good without such tricks. Delicate boiled squid goes well with eggs and green peas, while hot onions and sweet and sour apple add a very interesting spicy note to this classic taste. It is simply impossible to break away!
Salad with squid, corn and fresh cucumber
INGREDIENTS:

- 1 small can of corn (200 g)

COOKING METHOD:
1 In order to make a light and very tasty squid salad with fresh cucumbers and canned corn, the squid carcasses must be thawed, completely peeled from entrails, skin and films and quickly boiled in boiling water until a soft and tender consistency. 
2 Boiled squid carcasses should be cut into long thin strips and put in a large beautiful salad bowl. 
3 Boil the eggs for 13 – 15 minutes after boiling water, then pour cold water directly into a saucepan and drain completely. After that, the eggs must be peeled and cut into small cubes.
4 Chop the onions very finely so that they do not stand out too much in the salad. If you do not really like the taste of raw onions, then you can scald them with boiling water, placing them in a metal colander, or take just a little for a spicy speck. I prefer to use red onion for salads, which has a softer and sweeter taste, therefore, it is harmoniously combined with other ingredients of the salad. 
5 The cucumbers should be washed and cut into long thin strips approximately the size of the squid.
Advice! If you are using winter greenhouse cucumbers with a thick skin, then it is better to cut it off with a knife, otherwise it will not be very pleasant to feel in the salad. In the case of small young cucumbers, the peel not only does not interfere, but also brings a lot of vitamins and other useful substances into this dish. Therefore, I advise you to first taste the cucumbers and decide this moment at your own discretion.

6 Finally, put canned corn in the salad, from which you must first drain all the liquid. 
7 Ready squid salad should be mixed with mayonnaise and salt.
